In order to avoid hits in NHL 24:

When an opponent is running towards you, please downwards on the left analogue stick and press LT (Xbox)
When an opponent is running towards you, please downwards on the left analogue stick and press L2 (Xbox)

This will effectively see your player stop in their tracks, instead changing direction in order to avoid the hit.

Small movements like this are vital to helping you slink away from opposition players, as you can quickly change direction and continue moving forward.
