To download the new tracks, first ensure your Nintendo Switch console is connected to the internet. Then, head to System Settings> System and ensure your console is up-to-date too by checking System Update.
Once you’ve done this – and assuming you’ve already downloaded and installed the game (or have the card in the system) your Mario Kart 8 Deluxe tile should start downloading the update automatically.
If not then from the Home screen, press the Plus button on the Mario Kart 8 tile, head to Software Update, and press the option on the menu to start downloading the update.
Assuming you’ve bought the pass – or have an active Nintendo Switch Online + Expansion Pass subscription, you should find the tracks in game selectable in the usual places when you go to set up a race.
There’s never been a better time to purchase the Mario Kart 8 Deluxe Booster Course Pass so you can avail of all the tracks that have already been added to the game so far.
